Let’s Make A One Meal Dish Salad
When the new year came around, of course, my family discussed our goals and the one thing we all agreed on is we need eat healthier this year. I’m not the biggest fan of veggies, but an awesome salad will always be one of my favorite dishes to eat. I love raw veggies a lot more than cooked vegetables so I wanted to know if everyone would eat a big salad for dinner with the protein inside the salad. I got all thumbs up, so cool beans more salads on the menu. We usually have a side salad 2 to 3 times a week, but a salad for the main course is new for us. We are so stuck in the routine of meat, vegetable and a side dish for dinner, so we need to change that up a bit. Time for change!
My family gave all kinds of examples of what type of salads they want to eat and today I decided to make a Chicken and Veggie Salad and surprise them with it for dinner. My daughter, Sahara will be helping me put the salad together. We headed to Walmart today and picked up all the ingredients for the Savory Chicken Salad. Walmart is our go-to place for quick and easy food items. We found everything we needed within 10 minutes and we were out in 15 minutes. Looking at the prices compared to my other shopping store, I know I saved some money! I’m all about saving that money!
My family loves chicken, so I made sure to grab the Tyson® Grilled & Ready® Chicken because it is simple and convenient to make. However, the best part is how delicious and healthy this protein is and added to a salad I know I’m doing right by my family.
I also picked up Wish-Bone® Italian Dressing because it has a robust, full-flavor that will only add to the chicken and salad. The dressing is packed full of herbs, seasonings, and taste for an extra zesty boost of flavor. Plus no high fructose corn syrup added- love that! Now did you see the PRICE (pic above) for this yummy salad dressing, I picked up two bottles because I like to cook with the Wishbone Italian in all kinds of meals.
Okay, got all the ingredients, time to make the SALAD! It took me less that 15 minutes to make and on a busy weeknight this is perfect. I started out cooking the chicken on the stove, and when that was done, I tossed in 1/4 cup of the salad dressing. Next step was cutting up the veggies, and placing everything on a plate. We even tried a new cucumber peeling process- the ribbon.
INGREDIENTS Serves 4
- 12 oz. Tyson® Fully Cooked Grilled & Ready Chicken Breast Strips, prepared according to package directions
- 1/2 cup Wish-Bone® Italian Dressing divided
- One large cucumber, cut into ribbons with peeler
- Cauliflower or Broccoli (cut into bite size pieces)
- Snap Peas (1 bag)
- ¼ cup crumbled or shredded cheese
- 2 Tbsp. chopped nuts
- Handful of croutons
- 2 Hard – Boiled eggs (next time I will add this)
DIRECTIONS
- Toss Chicken with ¼ cup Italian dressing in medium bowl.
- Arrange chicken with all the salad ingredients.
- Drizzle with remaining dressing.
I noticed while eating dinner we were all going in, not talking much and my husband he kept saying oh my goodness this is so good….I think it was a HIT! He informed me we never go out to eat for a salad again because we can make a better one at home. Eating healthy foods and being together is all my family needs at dinner.
